Easy pork recipe for sandwiches or as an entree. This version uses a season packet for easiest results.
Place pork into a gallon-size storage bag. Mix seasoning packet with soy sauce and EVOO to make a marinade. Pour the marinade onto the pork in the storage bag, seal the bag, and work the bag slightly to coat the pork. For best results, refrigerate for at least 6 hours.
Heat oven to 400 degrees. Spray a baking dish with cooking spray. Place the marinated pork into the baking dish. Reserve the marinade. For best results, insert an oven-safe thermometer into the center of the pork. Loosely cover with foil.
Depending on the thickness of the pork, bake for approximately 45 minutes – 1 hour, until it reaches 145-150 degrees in the center. For best results, baste the pork with the reserved marinade every 15 minutes. For the last 10 minutes of this time, bake uncovered to caramelize the outside of the pork.
When the pork has reached 145-150 degrees in the center, remove it from the oven and let it rest for at least 5 minutes before slicing thinly. Serve Xa Xiu with rice and veggies, or in popular Vietnamese dishes, such as Hu Tieu – Pork & Noodle Soup.
